Wow! Much obliged for the cooking tip. I have never cooked a steak that way before, always just on a cast iron pan to medium rare. Yes, I agree, the best steaks are the ones you cook yourself with quality beef. It's hard to buy Australian Angus beef in Melbourne. Wagyu beef is easy to source here, but they only sell it to you in 3-4 kg chunks and at prices of $155 to $220 a kg, and that's too much to buy at any one time (they do sell them as individual 250gm or 350gm steaks, but for such individual lots they slap on another lecy of $40 per kg .... so better to eat Wagyu at a restaurant! in Vic for me)
