| From the Where2sing.com forum: SAMMO: It was born out of complaints that it was like living in a smoke-house lol. The idea is that the sear seals and colors while the oven actually cooks the inside at a slower rate thus keeping it juicy and tender and not making it tough on the outside. As a bonus, covering in al-foil lets others vary the oven temperature without impacting your steak too much and you can do a whole tray and they'll be ready all at once. Alas, this isn't Ready-Set-Cook so I better dream up something karaoke related lol.
