The Idol franchise shows a way of doing this. All their singers have to pass through several genres such as swing & soul.
It would not be unfair to draw a songlist from a barrel and make the competitors choose one from the list. There could also be challenges in which competitors made a list of songs they could sing and others picked the actual ones from that list. The thing to avoid is one-trick ponies coming in with over-rehearsed songs. - boring. Who wants to hear Unchained Melody again?
I may not be a KJ but I do know something about games & competitions as that is what I do in my government day job. So if anyone wants to try new ideas I'm happy to assist. I too get bored with talent quests.
