I don't necessarily believe that there's nothing the host can do. I've started doing 'suprise songs' (host chooses a song for the singer) at one of my venues because the regulars were getting into a habit of doing the same songs week in week out. A great deal of trust is required for this to work and it can crash and burn but for the singer who doesn't mind going out on a bit of a limb, it can be quite challenging, not to mention entertaining for the crowd. It's amazing how the subconscious can absorb popular songs so those tracks that you didn't think you knew, you actually find that while you may not know the words, you certainly know the melody and tempo. It's also a great way for the host to ensure that the night isn't dragged into ballad hell of which few nights recover.
Not all singers will want to do this and I dare say that most of the Chatty regulars will be adverse to the idea, especially if they're only getting one or two songs, they might not want to 'waste' it on a risk like that. It can be very rewarding however when it works...
