I think there are many of us who would love that we could all be ourselves, but the reality is that over time the fashions change and what may be liked at some stage is not at another. There will always be wars, always be bullying, always be other people's points of view ...
Change occurs over time not in an instant and what i am trying to say is that for Sally for example, she will be looked at in today's music industry as not fitting in with the mould. The mould of today is Kesha (unfortunately ... anyone heard her sing live? terrible!) and Katy Perry etc. The majority of these are marketable for their looks. Sally will be forgotten in a year and will not do well in any sales in reality.
I must challenge your thoughts that obesity is a mental illness. There is no classification for obesity for that. Obesity is born from conditioning and modelling of overeating and not eating the right things and then not doing enough to counter what you put in. It is not a mental illness. Anorexia is when an individual refuses to maintain a minimal normal body weight. and occurs in more industrialised societies where attractiveness is associated with being thin.
I love where your heart is, but the reality is that change happens over a number of years, often many many years, and not overnight. The 1800s women were all thought of as attractive if they had body fat on them (look at all the paintings!) whereas the 60s had slim stick figures and then the 80s had the 'supermodel' with a bust and legs and flat waist etc... you see it all changes but takes time. I don't know if we are living in different worlds but I still do not feel that the size 14 and 16 models are well accepted. They represent such a small fraction of the models out there!

However, for now, Sally will not fit in with the music industry. That is the fact of the matter. Subo was marketed by Simon Cowell so well as I have mentioned before. He saw that the 'ugly, larger person dream' of the majority of the public could be found in her. Personally i think she can only sing one song well and the rest has been marketing very well an OK singer.
