From the Where2sing.com forum:

Mandy, if I put my 'singer' hat on, my preferences are pretty simple, a decent selection of songs to choose from (and a host that's happy to play my own discs if need be), good quality sound and a friendly, professional host that keeps the night moving along well by working the crowd and is technically skilled i.e. a host that proactively twiddles the knobs to make each singer sound as good as they can be (not just a 'set and forget' acoustic approach). I am not at all fussed by other things like lighting, effects, venue/crowd size etc.

If I put my 'observer/crowd' hat on, I just like to see all singers given the opportunity to have a fair go. (I love watching karaoke singers perform and find them an endless source of inspiration, lessons and ideas - I could quite happily never sing another note again and sit back and just enjoy watching the show!) As an observer, while I think it is important for a host to respect their regulars (who, it must be acknowledged, can often generate quite a following over time and have the ability to draw a crowd themselves) and/or clearly very talented performers, it should never be at the expense of other singers, who may not necessarily be as talented, but nevertheless are genuinely having a fair dinkum go, having fun, and are genuinely wanting to contribute toward a good night of entertainment for all venue patrons. Some hosts are better than others at managing this fairness aspect and keeping the (occasionally overinflated!) egos of some singers in check! (Now, if I could actually dance...) I think a good size dancefloor area (and reasonable drink prices!) would be important for me when a classic 80s track comes on from my fave 'Countdown/Wavelength era' bands like Duran, Pseudo, Depeche and Real Life!
