First of all, I'M CONFUSED!!! So what I'm about to do is give you all an example of what comes out of my basic Behringer 1202fx.

First of all, I input a STEREO signal via a Behringer UCA202 USB Sound Card.
Mics are mixed into the song at a point which appears to be central to those two channels. (ie: even levels on left and right)
Headphones out on this mixer is STEREO
Aux out is mono but is the whole signal (ie left, right and mics mixed together), but this is only used for foldback.
All non-multiplex karaoke tracks are STEREO
If you played these as a mono utilising ONLY the left channel, yes you would lose some of the effect. (good examples of this is Choir Girl by Cold Chisel on Sunfly or Ted Mulry's Jump In My Car)
When I was running a show, I ran in full stereo. If your speakers are placed correctly, you can get the full effect across the majority of the room. Although yes, mostly it is a compromise, but not that bad.
