The last venue I went to was the Chatswood RSL, last friday, 11jan13, the host's name is Gary, when every singer came up to sing he adjusted the mix to suit, I observed him adjusting the trim pots as the person was singing. I do have to admit that the sound that he produced was sweet to the ears. the person who I was there with, who is also a singing teacher, commented on the quality of the music that was being produced. it doesn't take much, just a good ear and a few tweeks of the mixer to produce a good quality sound.
If I had to set a standard, there would be a lot of people of of a job...lol
