Although I don't get to visit much these days, for the simple reason that I'm 1-2 hours on the other side of Sydney, when I do it strikes me how quietly but effectively he runs his show. Not flashy, not highly visible but it runs like clockwork and most importantly you come away feeling you've had an exciting night.
It is highly likely that the other hotel wanted the regular numbers they weren't getting with their old operator so called in the experts. I accidently visited the wrong hotel one night and I shaltn't say no more.
